Rhubarb and Custard Vodka Cocktail Recipe
INGREDIENTS
Syrup
150g Rhubarb, chopped
45g Caster Sugar
40ml Water
Cocktail
50ml Vodka
50ml Rhubarb Syrup
15ml Fresh Lemon Juice
25ml Advocaat
100ml Fresh Custard
1/2tsp Vanilla Paste
Ice
INSTRUCTIONS
Rhubarb Syrup
For the syrup, place the sugar & 40ml of water into a saucepan.
When the sugar has dissolved, add in the rhubarb & cook for 5mins on a medium heat until the rhubarb is just tender
Sieve the contents gently so you just get syrup & no pulp. Leave to cool
Cocktail
Shake together the vodka, rhubarb syrup & lemon juice in a cocktail shaker with ice.
Pour into a glass over ice
Whisk together the advocaat, fresh custard & vanilla paste until you create a creamy foam. (We used a siphon whip with 1 Nitrous cannister)
Spoon the foam gently onto the top of the cocktail - VOILA!
