Rhubarb and Custard Vodka Cocktail Recipe

INGREDIENTS

Syrup

  • 150g Rhubarb, chopped

  • 45g Caster Sugar

  • 40ml Water

Cocktail

  • 50ml Vodka

  • 50ml Rhubarb Syrup

  • 15ml Fresh Lemon Juice

  • 25ml Advocaat

  • 100ml Fresh Custard

  • 1/2tsp Vanilla Paste

  • Ice

INSTRUCTIONS

Rhubarb Syrup

  1. For the syrup, place the sugar & 40ml of water into a saucepan.

  2. When the sugar has dissolved, add in the rhubarb & cook for 5mins on a medium heat until the rhubarb is just tender

  3. Sieve the contents gently so you just get syrup & no pulp. Leave to cool

Cocktail

  1. Shake together the vodka, rhubarb syrup & lemon juice in a cocktail shaker with ice.

  2. Pour into a glass over ice

  3. Whisk together the advocaat, fresh custard & vanilla paste until you create a creamy foam. (We used a siphon whip with 1 Nitrous cannister)

  4. Spoon the foam gently onto the top of the cocktail - VOILA!
