Elderflower Cordial Recipe
Nothing says “summer” quite like elderflower.
I love the scent in the air when you’re near an elderflower shrub!
I went foraging for elderflower this year, and used what I got to make some elderflower cordial, elderflower liqueur and elderflower sugar.
This cordial can be used to create delicious drinks by mixing with soda water or lemonade - plus add gin / vodka for an alcoholic kick!
INGREDIENTS
1.2kg Caster Sugar
750ml Water
1 Unwaxed Lemon, Zest
20 Fresh Elderflower Heads
40g Citric Acid
INSTRUCTIONS
Trim the elderflower heads into a bowl with as little stalk as possible (Be clear to pick fresh, clean, white heads away from roads & always check for bugs!)
Add the lemon zest to the bowl
Add the sugar & water to a pan & stir until homogenous
Heat gently until the sugar dissolves
Bring to a boil & then turn off the heat
Pour over the elderflowers, lemon zest & stir in the citric acid
Cover & leave to infuse for 24hours (do not leave longer than this or the flavour will change!)
Line a sieve with a clean muslin over a large jug/bowl & ladle in the syrup to strain
Pour the syrup into a sterilised bottle using a funnel
Makes 1L
Keeps for up to 6-8 weeks in the fridge
